  • Endless Overnight Oats

    Strawberry Rhubarb Overnight Oats

The secret to living apple-y ever after is Apple Cinnamon Overnight Oats. Actually, I don’t know the secret to happiness in this wild new world, but I’m doing my best to find the little joys in daily life. And while everyone else is wondering, what day is it? I’ve started to name my days by the flavors of overnight oats. What day is it? Oh, Apple Cinnamon day. When is that presentation due? Raspberry White Chocolate day. Can’t remember when you last washed your hair? Probably Carrot Cake day. Oh you heard that right. And maybe it’ll mean more hair washing because Carrot Cake Oats are oh so worth it. If you’re looking for a little pep in your step, read on for any endless array of overnight oats…and a few other ways I’m coping with keeping the days straight.

  • Nacho Average Cheese Sauce

When you think you’ve seen every imaginable combination of cauliflower gnocchi, you haven’t. And I’m not cheesin’ around with this one – it’s a “cheesy” sauce that does triple the work as the base for 3 recipes: a fully loaded cauliflower gnocchi bowl, broccoli mac ‘n “cheese” sauce and a creamy nacho cheese dip. Best thing about it? This sauce is plant-based, highly nutritious (thanks to sweet potato and nutritional yeast), plus you know it tastes legit when it passes the test of this cheese state native. With everyone sheltering, I know you’ve got time to cheese around, so let’s get cookin’!

  • Baking Away the Social Anxiety

Baking: not cancelled. Birthdays: not cancelled. Time with loved ones: not cancelled. It’s times like this we need to celebrate what we have…and see the bright side of social distancing – more time to spend with our families, forced rest and relaxation and an opportunity to get creative with some good old-fashioned homemade fun. Can baking rid the crazies? Deliciously likely. Can a backyard “camping trip” replace spring break plans? You’d be surprised. And can working from home mean spa day every day? Sign me up. These are weird times, but we can make muffins out of mayhem. And that’s exactly what I did with these 5-ingredient Apple Muffins that are as good for humans as they are for pups (including my bulldog, who celebrated his 7th birthday yesterday)! Read on for the recipe and for tips on how to thrive in the new social dystopia.
