Cauliflower Nachos: an excuse to eat a whole sheet Cauliflower Nachos: an excuse to eat a whole sheet pan of nachos yourself. Or share. If you’re into the generosity thing. • Holy sheet these are the most bombastic, plantastic nachos of your dreams, friends. Roasted cauliflower is loaded up with @edenfoods refried beans (organic pinto beans, water and sea salt - that’s it!), @sietefoods cashew queso, heirloom cherry tomatoes, strips of bell peppers and slices of fresh avo all smothered in melted cheese. Are you melting with envy yet? Here’s how you can stuff your face with these nachos, stat: • Roasted Cauliflower Nachos -Preheat oven time 425 degrees F. Layer parchment paper on a large sheet pan. -Slice a head of cauliflower into florets and place in an even layer on the sheet pan. -In a small bowl combine 1 T avocado oil, 1/2 tsp each of garlic powder, onion powder, ground cumin, paprika and salt + 1/4 tsp chili powder. Drizzle over the cauliflower and toss to coat. -Bake the cauliflower for 20 mins, flip with a spatula and load up with refried beans and shredded cheese. Return to the oven for 6-7 mins or until cheese is melted. -Finish off with your favorite fresh toppings like tomatoes, bell peppers, jalapeños and red onions. • Who’s ready for a plant-based party up in here, up in here? This may be cheesy, but I think these Parmesan tac This may be cheesy, but I think these Parmesan taco shells are grate. • Yes, I think I’m punny and yes I’ll stop with the cheese jokes. But seriously, these crispy taco shells are a 1-ingredient wonder. Yes, 1 ingredient! And yes, it took more than a few tries to perfect these taco shells. But that’s because it took realizing that not perfect, was actually perfect. Here’s how I did ‘em: • Cheesy Taco Nests -Grate cheese of choice (I used Parmesan, but cheddar also crisps nicely). -Place 1/4 C in the center of a skillet over medium heat. Spread out to create a 5-inch circle. -Allow to bubble up for ~2 minutes then carefully use a spatula (this is the hard part) to nest the cheese in between the nooks of an upside down muffin tin to form the shape of a shell. -Allow to cool for a few minutes and harden. -Gawk in amazement at your cheesy work of art! • I loaded mine up with @forceofnaturemeats ground bison seasoned with @sietefoods taco seasoning, crispy romaine, plump cherry tomatoes and diced avo.
