That Cauli Craze
Hello, spring! Giddy over these gorgeous heads of pastel purple and vibrant green cauliflower. I had to hold myself back from buying the orange too, otherwise I’d really be the crazy cauliflower lady…
Believe it or not, purple cauliflower is completely natural. It’s a heritage variety from either Italy or South Africa that gets its vibrant hue from the antioxidant anthocyanin. The flavor is a bit milder, sweeter and nuttier than standard white cauliflower and tends to be less bitter.
With this pretty pastel veggie, I made a smooth cauliflower mash that is as yummy as it is pretty. Whole30 compliant and a regular staple in my weekly rotation. Recipe below!
Purple Cauliflower Mash
*Steam 1 head of cauliflower
*Reserve 3/4 C of the water
*Blend cauliflower with 1/4 C of the reserved water
*Add 3 T ghee (or butter)
*Plus 1 tsp salt and 1/4 tsp black pepper
*Additional water as needed to get a creamy texture.
*Option to add a little lemon zest to top.
