Superfood Truffles

Spent the afternoon conjuring up these deviously delicious and healthy “truffles” to keep the sugar monsters at bay this week. Simple, Whole30 ingredients with a fun twist of either cacao, pistachio or coconut to keep things interesting because…food boredom is for realz. Recipe below!

Super what? Superfoods. Sometimes over-hyped, but sometimes, worth the hype. Adaptogens are the latest buzz and I am 100% on that buzzy train. “Adaptogens”. Sounds like a science experiment, right? It’s actually a class of healing plants that help the body to adapt to stress and normalize the body. For more info, check out this article from Dr. Axe.

One more familiar example of an adaptogen is ginseng, a root that is commonly used in energy drinks and teas and is credited with boosting energy, lowering blood sugar and cholesterol. One that may be less familiar is maca, a cruciferous vegetable native to the Andes, credited with reducing stress, balancing hormones and mood, as well as improving the immune system. It’s often ground up into a yellow powder with a slightly sweet taste. It can be sprinkled on top of oatmeal, blended into a smoothie or incorporated into these Superfood Truffles as a healthy afternoon snack without added sugar. Check out the dEATs below!

Superfood Truffles

– 1 C medjool dates
– 1 C shredded coconut
– 2 T coconut oil
– 1/4 C @navitasorganics maca
– Pinch of salt

Place all of the above in a food processor, roll into balls and then coat with your favorite topping or leave ‘em naked.

Coatings shown include cacao powder, crushed pistachios and shredded coconut, but you could also use freeze dried raspberries, goji berries, sesame seeds, cinnamon…the options are endless!
